Simple and delicious, this Avocado Tomato Salad is really luscious. Plus, you can never have too many salads. Lycopene in the tomatoes; Vital Omega 3 fats in the avocado and you’ve got some pretty healthy things going on here.

I didn’t want to add a lot of other ingredients, but you certainly could: onions, cilantro or parsley, cucumbers. The fewer the ingredients, the simpler if that’s what you’re going toward. Along with my cucumber and tomato salad, this is an old standby for me. When you don’t have time to cook, or you’re in the middle of your workday and want something flavorful without a lot of muss and fuss, this is the answer.

You can’t go wrong taking this to a gathering either. Most people like avocados and tomatoes and the freshness of this is welcomed whenever I serve it.

It’s definitely another easy recipe to put together in no time. Great for those hot summer days. Have it as a side or fill a large bowl and have as a complete meal. Creamy avocado and red, ripe, luscious tomatoes. What can get better than this for a great summer salad?

Ingredients

  • 1 tomato, cut up
  • A drizzle of olive oil
  • A drizzle of vinegar
  • 2 teaspoons Nutritional yeast
