No Oil Vegan Asparagus Risotto

This healthy vegan recipe, Oil free Asparagus Risotto with Peas and Mushrooms, is one of the best risotto recipes I have ever had. I LOVE, LOVE, LOVE Asparagus Risotto. Problem is with this dish, it is traditionally made with cheese. Every time I see it on a restaurant menu, my taste buds start their thing. So I just had to start making this at home.

 

Though vegan, my family even loves this dish. In fact, they request it. And that is definitely saying something. I feel quite confident, that once you’ve made this dish, you will most likely make it again and again. It’s that good!

Roasted Red Bell Pepper Appetizer

When my friend, Charlotte, brought this Red Bell Pepper Appetizer, a Healthy Vegan Recipe, over to our place for dinner one night when we were in the islands, it didn’t last very long. People just scrambled over it. It is Yum, for sure!

 

Who doesn’t like appetizers? Sometimes we can just make a meal of appetizers alone. Have you ever done that? Invite friends over for a meal, but instead of a sit down dinner, have a buffet of strictly appetizers – finger foods. You could have a variety of about 10 different appetizers.

Traditional Vegan Tomato Bruschetta

I LOVE a traditional vegan tomato bruschetta. My taste buds doing their thing, I’ve ordered bruschetta in restaurants only to be very disappointed. Now my tastebuds have to go wandering around looking for something else satisfying. Some restaurants try to get fancy and change it all up, but to me it’s just not the same.

 

If it works, as the saying goes, don’t fix it. I mean getting creative and changing it up once in awhile is okay. But sometimes you just can’t change tradition and have it work.

Cheesy Vegan Kale Chips

This can not only be used as one of your vegan appetizers, but it can also be a good after school snack for your children.

 

Now, if you’ve been reading my writings, you know how most of my family eats? They don’t like anything green, yet EVERYONE loves these.

 

It’s a great snack that’s also healthy. Gives you the salty, the crunch and the nutrients all at the same time. A bonus of three!

Black Bean and Bell Pepper Vegan Appetizer

My friend, Maria, brought this to a gathering and it went over very big. I LOVE cilantro but I know some people don’t. If you want to substitute the cilantro, instead you could use 4 to 5 mint leaves and 3 to 4 basil leaves, chopped. It’s delicious with the mint and basil, as well.

 

Best Ever Guacamole

Step 1

Score the avocado both lengthwise and width-wise. Scoop out the scored chunks with a spoon. Mash with a fork, but keep the mixture lumpy.

Step 2

Drizzle lemon juice over the avocado, to prevent from browning. In the meantime, prepare the rest of your ingredients. Add everything to the avocado mixture and toss together.

Step 3

Serve with homemade pita chips, tortilla chips or your favorite crackers. This is just the best.
