These cheesy vegan kale chips, a bonus of three,  can not only be used as one of your vegan appetizers, but it can also be a good after school snack for your children. Or, any anytime snack, really. It’s a real surprise to people who think they are not going to like these because it’s a green vegetable, probably bitter and probably something they wouldn’t otherwise think of trying. Yet, when they give themselves permission or taste out of courtesy, they have a whole new-found appreciation. A whole new-found appreciation for Kale in particular, but also for trying something new.

Now, if you’ve been reading my writings, you know how most of my family eats? They don’t like anything green, yet EVERYONE loves these. A friend admitted to me the other day that she absolutely did not like Kale and when I told her about these, she had less than happy thoughts about them, though she didn’t verbalize it to me. Then, when she was over one day and I offered her the chips, she tasted them to be polite. Guess what? She again admitted to me later that she was pleasantly surprised. She loved them and was going to include them in her repertoire of recipes.

Health Notes

Kale is one of the most health promoting greens available providing copious amounts of Vitamin K, A and C and also contains good amounts of manganese. It contributes to good vision health, helps keep immunity intact and fights free-radicals with good antioxidant protection.

Cheesy Vegan Kale Chips – A Bonus Of Three!

Ingredients

  • A bunch of Kale, washed and broken into bite size pieces
  • Sea salt
  • 1 or 2 tablespoons Nutritional Yeast

Instructions

  • Wash a bunch of Kale. Pat dry but not completely. Break into bite-sized pieces. Place in a bowl and sprinkle with a bit of sea salt and the Nutritional Yeast. With two clean hands, sort of massage the Nutritional Yeast into the Kale greens until they are sufficiently covered
  • Spread Kale pieces onto a cookie sheet in one layer. Bake at 350 degrees for 10 to 15 minutes or until crispy
