Tomato Basil Brown Rice is a lovely-in-place-of-pasta dish. It’s easy and delicious too. Tomatoes and Basil are good anytime. Now add this brown rice grain and you have a healthy, low-fat dish. Further, this dish is versatile in that it’s good served both hot or cold.

I make up a batch of brown rice at least once a week and have it on hand for those times when I don’t have time to cook or don’t feel like cooking. You know, when you’re hungry and you want something right now? If you have a bowl of rice prepared, then it only takes a moment to whip up this dish by adding the basil, tomatoes and the seasonings. Yum!

By adding different ingredients besides the tomatoes and basil, you could have a different rice dish every day. For example, add sauteed veggies such as cabbage, carrots, onions, green peas, and or green bell peppers and you have something very akin to fried rice. Cook up a batch of lentils or split peas and serve them over the rice.

Rice is a comfort food, sort of like oatmeal. I think I’ve mentioned before that when I was a child, I would have a bowl of rice as a snack with milk and sugar. I still do that sometimes to this day. Only now I use plant-based milk. I even have rice like this for breakfast somedays. It’s filling and keeps you satiated for the morning.

  • 1 cup cooked brown rice
  • 1/2 cup chopped fresh tomatoes
  • A few fresh basil leaves, cut-up
  • Sea salt and Pepper
  • A drizzle of red wine vinegar and juice of half a lemon
