Fall and pumpkin recipes, especially vegan pumpkin recipes, go hand-in-hand. You just can’t get to this time of year and not have some wonderful pumpkin recipes on hand.

Vegan pumpkin recipes have been on my mind lately.

It’s been weeks since I talked to my friend, Tom, one of the employees at my church, about vegan food.

He wants NOTHING to do with it. He is quite content with the Standard American Diet because he believes it tastes better.

The topic came to vegan desserts. I promised I would bake some muffins for him. Be careful what you promise, Carol. As life goes speedily by and gets so crazy, all these weeks have passed and I have not fulfilled my promise to him yet. He probably thought I forgot. Maybe he even forgot. But I have not.

Everyday when I see him, I think to myself, “Tom, I have not forgotten. I fully intend to bring the muffins.”

So, today I got busy and baked. My recipe only made 18. I wanted to bring at least a dozen to him and his co-workers. That left 4 for my family, after I quickly devoured two fresh from the oven. Not worth the mess and time to only have four left.

I am a great proponent of doubling and tripling recipes. Afterall, if you’re going to make a mess in the kitchen, you might as well have enough to make it worthwhile.

So, I doubled these pumpkin recipes. The Pumpkin Bread makes two loaves and the Pumpkin Muffins makes 36. Freeze extras immediately so you have them when you want something like this, but don’t have time to bake it.

Or, if someone asks you to bring something to a get-together, just open your freezer and go shopping!

In fact, I will probably use one of these Pumpkin breads for Thanksgiving. A treat made well ahead of time.
