Red Bell Pepper Appetizer

When my friend, Charlotte, brought this Red Bell Pepper Appetizer, a Healthy Vegan Recipe, over to our place for dinner one night when we were in the islands, it didn’t last very long. People just scrambled over it. It is Yum, for sure!
Who doesn’t like appetizers? Sometimes we can just make a meal of appetizers alone. Have you ever done that? Invite friends over for a meal, but instead of a sit down dinner, have a buffet of strictly appetizers – finger foods. You could have a variety of about 10 different appetizers


  • 2 red peppers, diced
  • 1 (14-ounce) jar roasted red bell peppers, drained and coarsely chopped
  • 1 cup Kalamata olives, pitted and chopped
  • Any amount or combination of: Rosemary, oregano, basil, and thyme, chopped fine.
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Freshly ground pepper


  • Mix all ingredients together. Serve with small rounds or squares of bread or crackers
