Vegan Pumpkin Recipes
Fall and pumpkin recipes, especially vegan pumpkin recipes, go hand-in-hand. You just can’t get to this time of year and not have some wonderful pumpkin recipes on hand.
Vegan pumpkin recipes have been on my mind lately.
It’s been weeks since I talked to my friend, Tom, one of the employees at my church, about vegan food.
Healthy Snack Recipe: Oat & Brown Rice Nut Snacks
This Healthy Snack Recipe, specifically Oat and Brown Rice Nut Snacks, keeps me from eating less healthy foods when I am nearly always looking for something to snack on after dinner.
My go-to after dinner snack is usually fruit. Watermelon or cantaloupe in the summer. Oranges, tangerines, or grapefruit in the winter. But sometimes I just don’t feel like fruit.
And that’s when these lovely little snacks come in handy. After dinner. I don’t know about you, but the longer the day wears on, the hungrier I get. Especially if I’m not busy. Seems the more busy I am, the less I snack. But have me watching TV at the end of the day, and I’m looking for something more to eat.
Cheesy Meatless Vegan Pasta
Well, I must say. This is one cheesy meatless vegan pasta among my healthy vegan recipes that all of my family likes. Hooray for me!
You know my family is not vegan and they shun anything without meat. So when my family likes it, you know it has to be good.
This one’s a winner, in more ways than one:
- I love that I can make it for my family and they love it.
- I love that I can make it for friends (it’s very guest worthy) and they, too, love it.
Easy Vegan Chocolate Cake Cookies
Who Isn’t Crazy for Chocolate – Chocolate Cake Cookies? Well, here is an easy vegan recipe, another one of my favorite chocolate recipes, this time in the form of Chocolate Cake Cookies.
That’s right. They’re a cake-y kind of consistency. I’ve had this one for 30 some odd years. I have since veganized it and it’s one of those go-to recipes for whatever occasion. I’m taking some to my granddaughter for her birthday tonight. Also taking some to my Monday morning volunteer group.
It’s a great holiday cookie frosted with the color of the season: Pink for Valentine’s Day. Green for St. Patrick’s Day, or a combination of red and green for Christmas. They are very festive looking.
Vegan Pumpkin Bread
The fact that this Vegan Pumpkin bread is egg-free, dairy-free, and oil-free makes it a healthy vegan recipe.
When I mention Vegan Pumpkin Bread most people go eeewww! After one taste though, they are pleasantly surprised by the good flavor. It’s a popular bread to give as a gift as well as to serve guests. I usually bring it every fall, when pumpkins are at their peak, to my Monday morning volunteer group.
I love doubling and tripling recipes. I always figure if you’re going to make a mess in the kitchen, it might as well be worth it, so you have enough on hand.
Pumpkin Muffins – Healthy Vegan Recipe
Sometimes you want cake and sometimes a muffin fills the bill. These Pumpkin Muffins, another healthy vegan recipe, are delicious. You could have these mixed ahead and ready to go in the oven just before your children come home from school.
Please don’t let the long list of ingredients deter you. They are really easy to make.
They will make the perfect after school snack. Same goes for dinner guests. Pop them in the oven as you sit down to dinner and they will still be warm by the time you are ready to serve dessert.
