Vegan Caesar Salad is what I was craving that night in the islands. I saw Caesar Salad on the menu and I began to taste it. I sort of knew the owner a little bit and asked if she could concoct something. Lo and behold, she came through for me.
I really like a good Caesar Salad, but there’s always that cheese issue. Even if you ask for no extra cheese on top when in a restaurant, there is always the cheese (and the oil) in the dressing.
What to do? Make it myself. Then you know what you are getting. No oil, no cheese, no preservatives and such.
I love going out to dinner. I love it for the camaraderie, the atmosphere, the fun, the energy of others in the place, those you’re with, but really? I’d rather have my own food. Hah!
Vegan Caesar Salad
Ingredients
- 1 teaspoon Dijon Mustard
- 2 cloves fresh garlic
- 2 tablespoons Balsamic vinegar
- 1 teaspoon Worcestershire Sauce
- 1/2 avocado
- 1/3 cup Nutritional yeast
- Freshly ground black pepper
