Oil Free Edamame Quinoa Salad

Ingredients

  • 1 frozen package shelled edamame beans
  • 1 frozen package corn
  • 1 frozen package green peas
  • 2 cups cooked quinoa
  • 1/2 - 1 cup grape tomatoes, halved
  • 1 red pepper, cut up
  • 1/4 cup raisins
  • 3/4 cup almonds, cut up
  • 1 red onion, diced
  • 3 green onions, diced
  • 1/2 - 3/4 cup parsley or cilantro
  • A drizzle of red wine vinegar
  • Juice of 1 lemon
  • Sea salt and pepper to taste

Instructions

  • Combine all ingredients together in a large bowl. Lightly toss together. Then add the vinegar, lemon juice and salt & pepper. Give it another toss to incorporate all.
