Oil Free Edamame Quinoa Salad
Ingredients

frozen package shelled edamame beans
1
frozen package corn
1
frozen package green peas

cups
cooked quinoa
1/2 - 1
cup
grape tomatoes, halved
1
red pepper, cut up
1/4
cup
raisins
3/4
cup
almonds, cut up
1
red onion, diced
3
green onions, diced
1/2 - 3/4
cup
parsley or cilantro
A drizzle of red wine vinegar
Juice of 1 lemon
Sea salt and pepper to taste
Instructions
Combine all ingredients together in a large bowl. Lightly toss together. Then add the vinegar, lemon juice and salt & pepper. Give it another toss to incorporate all.
