Middle Eastern Tabouli Salad

Ingredients

  • 1 cup bulgur wheat
  • 1 2/3 cups boiling water
  • The juice of two fresh lemons
  • 3 red, firm tomatoes, diced
  • A good, firm cucumber, unpeeled and diced
  • 2 cups curly, Italian parsley
  • A bunch of fresh mint leaves, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • Sea Salt and freshly ground pepper to taste

Instructions

  • Pour the boiling water over the bulgur. Stir. Now add lemon juice. Stir again and let sit for about 30 minutes, while you prepare the rest of the ingredients.
  • When the bulgur has absorbed the water and is tender, add it to the parsley mixture and enjoy!
