Apple Dumplings

There is only one big apple, but here are a few varieties of the baked kind.

An Apple Dumpling Story
or, in Pennsylvania Dutch, “Eb’l Dumplin’”

The year was 1969. The month, October. That’s what is on my recipe card. Wyn, a neighbor, when we lived in Chicago made these on the evenings the children were out “trick-or-treating.” When our doorbell rang, we expected little costumers waiting for their treat from us.

Cherry Pineapple Coconut Cake

Of all these easy vegan recipes, this one takes literally 5 minutes to prepare.

Keep the ingredients on hand and you’ll have the makings for a dessert in a hurry. A delicious dish served with your favorite vegan ice cream. Makes a nice holiday dessert also. And guess what? A snap to make: no mixing bowls to clean because everything goes right in the baking dish.

Chocolate Bundles

Step 1

Thaw pastry 30 minutes. Preheat oven to 425 F.

Step 2

On a lightly floured surface roll pastry to a 12-inch square; cut into four 6-inch squares.

Banana Walnut Muffins

Step 1

Lightly grease muffin tins or add muffin liners.

Step 2

Mix all dry ingredients together in a bowl.

Step 3

Mash bananas on a flat plate with a large fork. Let sit for a few minutes, then add to the flour mixture. Add rest of wet ingredients and stir just until everything is combined. Do not overmix batter.

Pecan Muffins (With Lots of Fruit)

Step 1

Sprinkle sugar over strawberries, to release the juices, and refrigerate.

Step 2

Combine all dry ingredients. Add the applesauce and egg replacers and the strawberries and mashed banana, along with the nuts. Give it a quick mix with a large spoon. Add the blueberries last and fold gently into the mixture, so they don’t get crushed.
