Blueberry Sauce

Step 1

Bring wine, blueberries, cinnamon stick and sugar to a boil. Cover and simmer 10 minutes. Gradually whisk in arrowroot and stir until thickened. Remove cinnamon stick before serving.

Blueberry Bread Pudding

This is Susan Branch’s Blueberry Bread Pudding recipe. If you don’t know Susan Branch you are in for a treat. I have all of her books and have been following her for years. She does all of the printing and artwork by hand, mind you. Her books are a delight for the mind and feast for the eyes. What a gift she has!

Now, here comes the disclaimer. She is not vegan and cooks with lots of milk and eggs and butter. Still, I like her and her books, not only for how she paints with words but also how she paints with pictures. Purely enchanting!

Vegan Strawberry Shortcake

Vegan Strawberry Shortcake popped into my mind as I strolled through the grocery store the other day and saw all the wonderful fresh strawberries. They were absolutely mouthwatering.

There’s nothing better in my mind than fresh fruit made into desserts: fruit pies, fruit cobblers, fruit any-which-way.

Nutty Cinnamon Bananas

Step 1

Melt vegan butter in a fry pan. Peel bananas and slice into rounds or split in half lengthwise. Fry until golden brown, then add the Agave sweetener and sprinkle with cinnamon and nuts. Cover over a low heat until they are soft and syrupy.

Vegan Banana Ice Cream

Here is something very easy. You know how bananas don’t last very long. You only have about a two or three day window of time to eat them when they are just right. They are usually either too green or too ripe and that “just right” time is very slim.

Well, just before they get to the point when you have to throw them out and if you know you won’t be eating them, peel and cut them into chunks. Put them in a baggie and freeze.

I know! It sunk. That didn’t affect the taste, though. It’s still delicious!

The original recipe did not call for chocolate chips. I have added them in this recipe. If you decide you want them, cut back on the sugar as it is a bit sweet with both the chocolate chips and the called for sugar.
