When my friend, Charlotte, brought this Roasted Red Bell Pepper Appetizer, a Healthy Vegan Recipe, over to our place for dinner one night when we were in the islands, it didn’t last very long. People just scrambled over it. It is Yum, for sure!

Who doesn’t like appetizers? Sometimes we can just make a meal of appetizers alone. Have you ever done that? Invite friends over for a meal, but instead of a sit down dinner, have a buffet of strictly appetizers – finger foods. You could have a variety of about 10 different appetizers.

Set a pretty buffet with lovely cloth napkins and flowers and such. If you use paper plates, be sure they are sturdy enough to hold an array of food. Nothing worse than having a flimsy paper plate and having food fall off. Also, if you use paper plates, get a really pretty design pattern, so your table looks festive.

This is easy to make and delicious at the same time.

To satisfy the cheese eaters, you could spread the bread with goat cheese first if you so desire. This wasn’t originally a vegan appetizer and the goat cheese was on Charlotte’s original recipe, but I usually don’t include it. Suit yourself.

I say this because not everyone is vegan. I’m a lone one in my family, so I have to prepare enough of a selection to satisfy all tastes and eating styles. Perhaps you face the same challenges when you entertain or even just prepare food for your family if they aren’t on the same vegan page that you are. Just sayin’.

Whenever I have the opportunity, I get the kids involved in helping. They love to chop and open cans and such. And it helps you, the cook, in the meantime.

Red Bell Pepper Appetizer

Ingredients

  • 2 red peppers, diced
  • 1 (14-ounce) jar roasted red bell peppers, drained and coarsely chopped
  • 1 cup Kalamata olives, pitted and chopped
  • Any amount or combination of: Rosemary, oregano, basil, and thyme, chopped fine.
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Freshly ground pepper

Instructions

  • Mix all ingredients together. Serve with small rounds or squares of bread or crackers
