Simple Mediterranean Artichoke Salad

And here you have a very colorful and tasty salad that took no time to prepare.

I made this again yesterday and took it to my son and daughter-in-law’s house for dinner. Everyone loved it and though the bowl was practically empty, Sabrina was happy when I left the rest for her.

Fiber Rich Vegan Bran Muffins

If you like bran muffins, you will like these. These vegan muffins are healthy, hearty, full of fiber and delicious.

Double this recipe and you will have enough batter to keep in the refrigerator for six weeks. Prepare the mixture. Bake as many as needed and store the batter in the refrigerator.

Another thought is to bake all the muffins at the same time, use what you will and freeze the rest.

 

Blueberry Lemon Scones

Oops! Too sweet Blueberry Lemon Scones is not good, nor too sweet anything for that matter. I accidentally picked up the 1/3 cup measure for the sugar instead of the 1/2 cup and already had the sugar poured into the flour mixture before I realized it.

But then I guess it depends upon your taste. I don’t like anything too sweet. On the other hand, nothing is sweet enough for my husband, sweet addict that he is. So, suit yourself. But I think the 1/2 cup would be better than the 1/3 cup that I mistakenly used.

Vegan Oat Scones

Step 1

Combine the vinegar and the milk together and let sit for a few minutes.

Step 2

Combine all dry ingredients. Add the soured milk to the dry ingredients and stir just until mixed together.

Chocolate Chip Scones

Step 1

Preheat oven to 375 degrees. Combine all the dry ingredients in a large bowl. Use a whisk to remove any lumps. Add the vegan butter and mix well with a large fork, a pastry mixer or just two clean hands.

Step 2

Add the chocolate chips, walnuts, applesauce, vanilla extract, almond milk, vegan sour cream, and vanilla extract.

Vegan Orange Walnut Scones

Step 1

Preheat oven to 375 degrees. Combine all the dry ingredients in a large bowl. Use a whisk to remove any lumps. Add the vegan butter and mix well with a large fork, a pastry mixer or with two clean hands.

Step 2

Add the liquid ingredients. Stir. Then, add the nuts and orange pieces. Mix everything just until combined. Do not overmix.
