Italian Pasta Sauce

This is Italian Spaghetti Marinara Sauce coming to a full rolling boil. When we were kids, we couldn’t wait to get into this, it was just so good. Practically before the sauce (We call it Sugo; Some people call it Gravy) was even done, we would slather several bread slices with the sauce and eat it before the pasta part of the meal. It would get really soggy, but oh so delicious. Does anyone else remember doing this? It couldn’t have just been at our house.

Chickpea, Brussel Sprouts Mac

Step 1

Saute carrots, garlic and onion in Dutch oven for about 5 minutes.

Step 2

Add water, vegetable broth and tomatoes. Add seasonings and nutritional yeast. Bring to boil, then turn to simmer and let cook for 30 minutes.

Step 3

Add Brussels sprouts and macaroni and cook for another 10 minutes or until done.

Ditalini Pasta, Peas & Tomatoes Recipe

Step 1

Saute onion in a bit of olive oil for about 5 minutes. Fill Dutch oven with water and vegetable broth. Add onion and drained tomatoes. Let come to boil, then simmer for about 30 minutes. Add frozen peas. Add pasta and cook until done. Season with sea salt and lots of freshly ground pepper. The pepper makes this dish.

Awesome Black Bean Burritos

These awesome black bean burritos were inspired by the burritos we are served when we go to the islands.

 

One day, Kennedy, my granddaughter, & I were sitting on the beach near lunch time and getting hungry.

 

Suddenly, we remembered the goodness of these burritos we’d had before. And since we hadn’t had them in awhile, we decided to place an order for lunch and planned to have them on the beach. We were going to be good and split one order. Oh my gosh!

Tomato Salsa

This is another one of our favorite dishes. It’s a chunky tomato salsa. I love Mexican food, but for some reason, some of it is too smooth, some too hot and some just not right.

I think the texture of the food has a lot to do with the taste. And it’s true with this tomato salsa. Chunky tomato salsas just seem to have more character, and this one seems to do the trick.

 

Easy Enchilada Sauce

Step 1

To a sauce pan, add – oil, flour, chili powder
Stir until smooth and slightly thickened

Step 2

Add – cumin, vegetable broth, tomato sauce, 1/4 teaspoon garlic powder
Stir all ingredients until well mixed.

Step 3

Simmer for 20 – 30 minutes and spoon over burritos.
